De ansjovis kent een hoog natuurlijk zoutgehalte, variërend van 41 tot 50 promille. Vaak wordt de ansjovis gegeten als tapas in de mediterrane landen, zoals Italië, Griekenland en Spanje. De ansjovis wordt dan vaak gemarineerd met zout, olie, azijn, knoflook en/of citroensap.
