Deze mossel tijdens het kweken niet heel de tijd onder water is? Door de bevestiging aan de houten palen en het getij, komen de mosselen twee keer per dag boven water te staan. Hierdoor groeit de mossel minder snel, maar daardoor is de smaak meer geconcentreerd in het vlees.
