Langoustines

Langoustine is een oranje schaaldier met een witte buik. De langoustine behoort tot dezelfde familie als de kreeft, alleen is de langoustine een stuk dunner. Het vlees van de langoustine zit in tegenstelling tot de kreeften in de staart en niet in de scharen. De langoustines worden 15 tot 25 cm lang. Officieel loopt het seizoen van begin de zomer tot aan de herfst, maar de langoustine is het hele jaar vers gekoeld of diepgevroren leverbaar.  De langoustine is een veelzijdig product met een zoete smaak. De kop en de schalen worden gebruikt om sauzen en bouillons mee te maken.

Van IJsland en het noordwesten van Noorwegen (Lofoten), tot de Atlantische kust van Marokko; ook in het westelijk en centrale deel van de Middellandse Zee.
