Tongschar

De tongschar (Microstomus kitt) of neustong (in Nederland) is een straalvinnige vis uit de familie van schollen (Pleuronectidae), orde platvissen (Pleuronectiformes), die voorkomt in het noordoosten van de Atlantische Oceaan. De tongschar is een platvis. Door de naam verwacht men dat het familie is van de tong, echter is dit niet het geval. De tongschar is een scholachtige vis. De vis heeft een lichtbruine gladde huid met lichte en donkere vlekken aan de bovenkant en de onderkant van de vis is licht van kleur. Verder is de kop vrij klein. De tongschar heeft een stevige structuur.

Het visvlees is iets zachter van structuur dan dat van zeetong en de visfilets zijn iets dikker. Tongschar is een vis met een bijzonder zachte structuur die best kort gaart. Hij heeft lekker dik en stevig vlees en een verfijnde smaak met zelfs een licht zoetje.
