Kreeft Canadees

De Canadese kreeften worden gevangen met kreeftenkorven. De vangstperiodes zijn zo ingedeeld dat de kreeft het gehele jaar verkrijgbaar is. De kreeften leven op de bodem van de oceaan waar ze op zoek gaan naar voedsel zoals kleine schaal- en verschillende schelpdieren. Na vangst worden de kreeften gelijk met het vliegtuig naar Europa gevlogen. Voor de kreeften is de lange reis erg stressvol, en wanneer een kreeft stress heeft dan houdt deze zijn afvalstoffen binnen. Eenmaal hier aangekomen worden de kreeften dus eerst verwaterd waardoor ze tot rust kunnen komen.

De Canadese kreeft is te herkennen aan een zwart tot roodbruin pantser, dat egaal kleurt bij het koken. De onderkant is oranje. De kreeften zijn verkrijgbaar in de maat 400 – 500, 500 – 600, 600 – 700 en 800 – 1000. Naast deze standaard maten is er ook nog een kleinere maat Canadese kreeft leverbaar, ook wel canner genoemd. Deze kreeftjes wegen 275-350 gram per stuk en zijn minimaal 8,25 cm van oog tot het einde van de kop.
