Bottarga
Bottarga; gedroogde viseitjes van de harder. Eind zomer begin herfst gaan de hardervissers weer het water op om vissen te vangen. De buik van de vrouwtjes zit vol met kuit, deze worden uit de buik gehaald, gezouten, tussen planken samengeperst en vervolgens gedroogd op een koele plek. Na enkele maanden zijn de eitjes veranderd in bottarga. De bottarga kwam altijd uit Italië en was zeer schaars, maar tegenwoordig is er ook Zeeuwse bottarga. Thoolse vissers verzorgen de bottarga voor Vishandel Schot.
Vangstgebied
De harder die verkocht word door Vishandel Schot wordt gevangen in de Oosterschelde, Westerschelde, Noordzee en de Waddenzee. Dit is voornamelijk in de maanden april tot en met augustus. De overige maanden trekt de vis naar het zuiden, en dan met name naar Italië. Doordat bottarga een gedroogd product is, is het lang houdbaar en is het product het hele jaar beschikbaar.
