Oesters creuses
De creuses zijn bolle oesters met een diepe kom. Ze worden ook wel wilde, Japanse of Portugese oester genoemd. Deze oester is na slechts 2 tot 3 jaar klaar voor consumptie en wordt in grote getale gekweekt. De maten van de creuses variëren van 0 tot 5 waarbij 5 de kleinste zijn en 0 de grootste. De maten worden aangegeven met Romeinse cijfers. 0, I en II worden normaal gebruikt om mee te koken – III, IV en V zijn om rauw te consumeren. De creuse zijn nog onder te verdelen in Zeeuwse creuse en Franse creuse. De Zeeuwse creusen worden, zoals de naam al doet vermoeden, gekweekt in Zeeland. Dit gebeurt in de Oosterschelde en in de Grevelingen. De Franse creuse is veel gevarieerder en wordt vaak vernoemd naar de streek waar deze gekweekt worden of de naam van de kweker. Fines de Claires of Gillardeu zijn hier voorbeelden van.
