Forel

Er zijn verschillende soorten forellen. De regenboogforel en de beekforel zijn de meest voorkomende soorten. Ze behoren tot de familie Salmonidae, onderfamilie van Salmoinae(zalm). Vandaag de dag worden er veel forellen gekweekt in Europa. Waarvan een groot gedeelte naar de horeca gaat.

Forel wordt gewoonlijk gevonden in koele, heldere stromen en meren, en is via natuurlijke weg verspreid over Noord-Amerika, Noord-Azië en Europa. Verschillende soorten zijn in de 19e eeuw in Australië en Nieuw-Zeeland ingevoerd door visliefhebbers. Hedendaags wordt in de horeca voornamelijk kweek gebruikt.

Smaak

Forel heeft een fijne structuur en een lekkere, vrij neutrale smaak. Het is een wat vettere vis, die daardoor ook heel geschikt is om te roken. Forel kan worden gekookt, gestoofd, gepocheerd, gebakken of gegrild en in de oven worden bereid.
