Amandes (Glycymeris glycymeris) is een tweekleppig schelpdier. De naam Amandes komt uit de Franse taal, maar kent nog vele andere benamingen zoals; marmerschelp, bittersweet, dog cockle en nog vele andere namen. De Amandes wordt voornamelijk gevangen door middel van de “Trawl-techniek”. Een andere methode is middels handwerk met een hark, maar dit is een erg intensieve methode om de schelp te vangen. De Amande plant zich meerdere keren per jaar voort en is het hele jaar door verkrijgbaar.

Smaak

Het vlees van de Amandes is stevig en heeft een redelijk zoete smaak. De schelp kan rauw gegeten worden, mits hij vers is. Een Amande kan getest worden op versheid door er een tik op te geven. Als de schelp zich niet sluit is deze niet vers. Plakkerigheid en een indringende geur zijn ook indicatoren dat hij niet meer vers is.
